New Year Yorkshire Puddings

I decided to greet 2026 with a very decent supper at home.
Chateaubriand with Roast Potatoes, Homemade Cauliflower Cheese with Leeks & ..
Yorkshire Puddings
Not a fan of a Yorkshire on the Christmas lunch plate preferring it instead to make an appearance alongside some beef. With English Mustard or Horseradish.

The Roast Spuds .. Your favourite way
The Yorkshire Puds .. Makes 8 large Yorkies
125g Plain Flour
2 Eggs
300ml Whole Milk
Seasoning
4 tbsp Duck or Goose Fat
Sieve the flour into a large bowl before adding the eggs & whisk
Slowly introduce the milk a little at a time & whisk until you get a smooth batter
Season with salt & pepper
Pour the batter into a jug & then cover with cling film before putting it into the fridge for at least 30 minutes
Preheat the oven to 200C/400F/Gas 6
Put half a tablespoon of fat into each of eight holes of a deep tin
Put the tray into the preheated oven for around 10 to minutes to heat
Pour the cool batter into the receptacles & return to the oven.
Cook for 20 minutes without opening the door until gloriously golden & risen
I managed just one & froze the remainders for another day.
A splendid way to start a New Year.
