February Sunday Lunch I

A Sunday at home. A gentle day with the sun shining. A blue sky as well. A blessed day.

The days are getting a little longer, too. I am in the mood for a hearty lunch.

Beef with Yorkies & Cauliflower & Leek Cheese.

Some backtiming is involved. 

I spend much of my life bowing to the clock.

This is part one of the February Sunday Lunch M&J blog.

Beef.

I quite enjoy the domestic duties of a Saturday & a Sunday but, equally, it's the joy of planning of meals at home once these chores are completed. A weekend Roast Beef supper is a reward for a long week at work and cleaning.

To the local butcher then & there, catching my eye immediately, is a handsome beef fillet. Mine was 70g.

It might as well have had my name on it & a cartoon bubble declaring: "Anne-Marie, buy me." ..

So I did.

Your oven is on at 200ºC/180ºC/Gas 6

The fillet, which has had some oil & pepper rubbed over it, will need a quick sear on all sides before going into a very hot frying pan

Oven gloves to hand, transfer the pan to the oven for 6-7 minutes - I like beef rare to medium rare

Take out of the oven, (oven gloves on again, the handle will be nuclear,). Cover loosely with foil & rest the beefy beast

Right, Cauliflower & Leek Cheese time .. HELLO 

For two

1 Medium Cauliflower broken into florets

1 Leek sliced

25g Butter

25g Plain Flour

275ml Creamy Milk

75g Cheese grated (I used a mix of Cheddar & Mozzarella)

Pinch of English Mustard Powder

Ditto Nutmeg

Seasoning

Steam the cauliflower florets & leek slices until tender & remove to an ovenproof dish

Here comes the cheese sauce by melting the butter & flour & stirring until it thickens

Slowly start whisking in the milk, bring to the boil

Lower the heat, stir in the cheese until you have a creamy consistency & simmer for 15 minutes

Add the Colmans Mustard & nutmeg plus some salt & pepper & pour the sauce over the cauliflower & leeks

Scatter a little more cheese over the top & bake for 25 minutes

Let it cool before serving.

I could have eaten the whole lot that evening but I resisted.
