Ginger, Chilli & Spinach Turkey Soup

I am enjoying the restful & easy days after a busy working Christmas.

There's something special about not having to go anywhere. The biggest decisions are about what to cook, what to eat & when.


Oh, & what to listen to on the radio or to watch on the tellybox.

It's time to make soup this afternoon. 

Of the Christmas Turkey leftover variety.

700ml Chicken Stock
220g Cooked Leftover Turkey cubed
1 Onion chopped
20g Ginger peeled & finely sliced
3 Garlic Cloves ditto
2 Red Chillies thinly sliced
2tsps Dried Thyme
150g Cooked Basmati Rice
Generous Handful of Baby Spinach Leaves
1/2 Lemon cut and juiced
Oil

In a frying pan, add the oil & fry the onion & the garlic till soft & remove from the heat

Heat the stock in another saucepan until it simmers

Add the cooked turkey, onions, garlic, ginger, thyme & chillies & the cooked rice

Bring back to a simmer and cook for a couple of minutes so that everything is warmed through

Add the spinach & lemon juice, stir & serve

Some crusty buttered brown bread went well with this.

It was a hearty and spicy soup - it had a wee kick for sure - just right for a frosty evening at the end of the year.
