The Comfort Lunch Club at work is in its second week & we're rocking it.

**FANFARE**

Fish Finger & Tartare Sauce Sandwich.

My fellow worker was looking after the fish finger element plus the rolls & I was charged with making the tartare.

Yesterday there was a plan hatched:

FW: "I'll grill the fish fingers at home, crunchy coated ones, obviously & Birds Eye, yes?"

Me: "Absolutely.."

FW: "We can heat in the microwave, though, I'm worried the crunch will go. Butter on the roll?"

Me: "Not for me, thank you .."

FW: "Well, I will be partaking .. I have cucumber at home, shall I bring that in because it could go on the sandwich .."

Me: "Not for me, thank you .."

FW: "How many are we tomorrow?"

Me: "Four I think .. "

FW: "I'll cater for six .."

Once done, it was time to add the pickled gems.

3 tbsps Capers (drained & chopped if they're big beasts)

3 tbsps Cornichons ditto

1 Shallot chopped finely

Lemon Juice a squeeze or two

Small handful of Parsley chopped

Stir everything in then taste to check your seasoning

As it turned out, FW was right. There were six of us in the office.

Most importantly, those fish fingers stayed crispy.

Three fish fingers. Obviously.
