Prawn Cocktail
In my heart of hearts I knew, but, anyway I kept on trying to convince myself that I could do it.
Cook my Christmas lunch after a long & busy day at work that is. No prep had been done - my schoolgirl error.
I got home at around 2pm &, after a glass of bubbles had been poured, there were a few calls & messages to take place.
All of a sudden it was 4pm.
I had a Plan B.
Ladies & gentlemen it was the ..
Prawn Cocktail
This should give you two generous helpings
For the mayonnaise
3 Egg Yolks
250ml Rapeseed or Groundnut Oil
Lemon Juice
To finish
250g Prawns or as many as you & yours fancy
Gem Lettuce shredded
Cucumber peeled & diced
Tabasco
Tomato Ketchup
Paprika
Cognac
Your trio of yolks go into a bowl with some seasoning
Whisk
Then start to add the oil
S L O W L Y
R E A L L Y S L O W L Y
A few drops at a time & whisk as you go along
You'll feel the mayo thicken & with good eggs used, the colour is simply wonderful
Now for the extra taste & colour ..
Add 2tsps of Tommy K
Splash of Tabasco
Ditto of the Cognac
A few squirts of lemon juice
Into nice wide glasses add your lettuce & cucumber
Toss the plump prawns in the mayo
Add to the glasses with a pinch of paprika
A little extra lemon juice to finish
Sit, eat with a slice or two of brown bread & butter & wish you & yours a Merry Christmas.
