Truffle Spaghetti with Garlic Mushrooms

Truffle Spaghetti.
I wish I had bought a new piece of luggage & just packed it with this most wonderful pasta.
On an autumnal evening it's time to match this with some mushrooms & garlic.
For Two
2 tbsp Olive Oil
200g Mushrooms roughly chopped
150g Spaghetti
3 Garlic Cloves sliced
1 tbsp Sherry
Parmigiano Reggiano grated - a generous portion
Fresh Parsley chopped - curly is prettier than the flat variety, I think
Heat the oil in a pan before adding the garlic & frying gently for 5-6 minutes
Bring a large pan of water to the boil & add the pasta; simmer for 9 minutes
Back to the frying pan & time to add the mushrooms, stirring regularly, before the Sherry goes in
Next the Parmigiano but leaving some to scatter across the final dish
Drain the spaghetti & leave a little bit of the cooking liquor in case you need some for the mushrooms
Parsley to garnish
This was a fine way to begin the autumn harvest.
