Aromatic Poached Chicken
Part of my morning weekend routine involves the planning of what will make the table.
Leafing through my well stocked shelves of cookery books is one of my favourite pastimes.
Sometimes, one well-thumbed recipe leads to further exploration online & then a wee bit of adaptation; hey presto, a scheme is hatched.

For one:
1 Chicken Breast Skinless
1 Carrot roughly chopped
1 Onion roughly chopped
1 Celery Stick chopped
2 Garlic Cloves peeled
1 Star Anise
1 Bay Leaf
4 Black Peppercorns
1/2 Bunch of Parsley tied with string
Into a large saucepan tip the carrot, onion, celery, garlic & the aromatics including the parsley
Add water, some salt & the chicken making sure that there's enough water to cover the breast
Bring to the boil & then simmer over a low heat for 12-15 minutes
Remove the chicken & let it rest for a few minutes before slicing or tearing & then serving it with what you will
I really enjoyed this with the spicy bean, tomato & spinach stew. The chicken was soft & juicy. The stew brought some gentle warmth & colour to the plate.
Tomorrow there's leftover chicken to be had & I'm thinking about some new potatoes with mint & butter together with some salad.
