Paprika Chicken & Avocado Salad
Nipped to one of my local indie delis early this morning in search of Sunday treats.
Grocer: "When is it going to rain? We need the rain." ..
Me: "Cooler tomorrow I think. Rain possible later in the week." ..
Grocer: **SIGHS**
Me: "Have you got any pâté?" ..
Grocer: "No, but there's hummus." ..
Me: "Lovely & let me take a few slices of the prosciutto as well please." ..
Now then, don't get me wrong, as The Pretenders once sang. I have no problem with salad.
On a Sunday though? A bore. But I can't turn the oven on. You see, it's 35 degrees. AGAIN.
Just remembering about The Pretenders, I once went to a special live gig of a new album by the band years ago in London. They played some new tracks and then Chrissie Hynde, (lead singer, songwriter,) said to the audience .. "You just want the hits, right?" .. We all nodded in approval. It was a great evening. Free nibbles & wine, too, plus, I was home by 9pm. I interviewed CH's former husband, Jim Kerr, once in a very posh London hotel, (Simple Minds lead singer,) & I knocked over an open can of Diet Coke on the carpet as I left. He was very polite about my mishap. Did I mention that the carpet was white.
Anyway .. I digress.
The hummus & the prosciutto were snacks for me for a Sunday lunch treat but for the main event ..
For two for the Sunday supper it was this:
300g Chicken Breast sliced
1 tsp Smoked Paprika
4 Cloves Garlic peeled & grated
50g Tinned Sweetcorn drained
3 tbsp Greek Yoghurt
1/2 tbsp White Wine Vinegar
1 Lime zested & juiced
1/2 Red Onion finely sliced
1 Gem Lettuce
Basil
Mix the paprika, 3/4 of the grated garlic & 2 tsps of oil in a bowl before adding the chicken & chilling for up to 4 hours
Dressing time - the rest of the garlic, the yoghurt & vinegar go into a bowl with some seasoning before heading for the fridge
Heat some oil in a frying pan before adding the sliced chicken. Cook for around 10 minutes, turning occasionally. Pour over the lime juice & zest take out of the pan & rest for 5 minutes
Salad time - tear up some lettuce leaves, peel & slice your avocado, add the sweetcorn, red onion before spooning over that lovely garlicky dressing before a few basil leaves go on the top before being joined by the delicious smoky chicken
I actually really enjoyed eating this salad on a very hot weekend afternoon.
Looking forward to autumn, cooler days & roast chicken though.
