Naughty But Nice
I have to admit that when I finally got round to trying that greatest of Scottish delicacies, ‘The Deep-Fried Mars Bar,’ I was more than a little disappointed. Sin should taste good.
But my spirits were raised again during one of my ‘pointing pathetically at the Greek menu’ moments.
‘What’s this?’
‘It’s fried cheese.’
‘Anything else?’
‘With chilli oil.’
Anything else?
‘No.’
‘I’ll try that - plus a jug of water please.’
‘No water.’
‘A jug of beer then please.’
And so it came to pass that a plate of Saganaki came into my possession, and although normally I tend to go green after eating anything that contains too much fat, Saganaki had no such side effect.
There’s no secret to it. A local cheese - they recommend Kefalotyri - dusted with flour or breadcrumbs and deep fried, to create a pleasingly creamy and surprisingly light snack. The Chilli Sauce makes all the difference though.
There was another recipe which caught my eye - as a cheese fan - and that was ‘Feta in the Oven’ which involves taking a slice (not cubes) of Feta, topping with some Sun Dried Tomatoes, and sprinkled with fresh mint and oregano. Wrap the slices in foil and bake in the oven for 20 minutes. The serving advisory recommends Garlic Bread.
