Lost Sole
Binge watching Rick Stein’s Cornwall series at the moment …
And inevitably inspired to cook some of the recipes he features in each episode which handily are on his website.
So it was fate, when I found a lonely sole in the bargain section of the supermarket the other day. It’s a sign, I thought.
However …
Rick’s recipe for a Warm Sole Salad called for everything to be mixed together in one bowl, and yet there was part of me that didn’t want to do that. I am ambivalent where warm salads are concerned. Sometimes they work, and sometimes they don’t (for me).
So in my usually wayward way … I adapted the recipe as I went along.
The original called for sole fillets to be dipped in egg and semolina before shallow frying. Then added to a salad of lettuce, tomato, avocado and torn basil leaves. A dressing made of olive oil, red wine vinegar, and a pinch of salt and sugar.
So ... I got as far as frying the sole, but then started eating it, with a twist of lemon and a squeeze of garlic mayo. Best laid plans.
Second course was the salad, which I deconstructed. Very refreshing.
Well, that went well.
