(un) Seasonal Fare

So, here on the mountain we’ve had two days of incessant rain and gales, after weeks of beautiful sunshine. One day we had both in the same day.

The weather sent me scuttling for the root veg for some comfort food to eat by the log fire.

What started as a simply idea to make Stwnsh Rwdan, ended up being a major debate between friends over what it should contain. I think it might be a North/South Wales divide thing. So, here are some options. Needless to say, topped with a fried egg, it hit the spot.

OK so … officially

Stwnsh just means mash, and then it depends what you add to it - stwnsh rwdan also contains swede, stwnsh pys (peas) or stwnsh moron (carrots).

Method

Peel, wash and dice the veg

Par-boil the swede, peas or carrots in salty water before adding the potatoes because of the different cooking time.

Boil them all together till cooked.

Drain and mash till smooth.

Serve with fried bacon.

I made this variant which has no potato so (this is where the argument came in) probably can’t be described as Stwnsh Rwdan. Splitting hairs, I said. (which causd another heated debate).

Boil up the swede and carrot, they cook in about the saem time. Add some salt and tony bit of sugar to the pan.

Drain, and add butter, salt, pinch of nutmeg, and lots of pepper to taste.

Sprinkle with parsley.

Sit in front of the roaring log fire on Midsummer’s Day, with Byron the dog, listening to the howling gales and lashing rain, and enjoy.
