Chocolate Fudge
This is another recipe written on a faded and foxed piece of paper. It was actually the back of a calendar for Wednesday December 30th, although it doesn't say which year. (I reckon it could only have been 1925 or 1931). Anyhow, it was again hidden inside an old book.
It's quick to make - about an hour in all and the results are truly phenomenal and makes you wonder why you would ever buy fudge from anywhere else again!

Ingredients
500g Caster Sugar
200ml Milk
30g Butter
1 1/2 dsps Cocoa Powder
1tsp Vanilla Essence
Method
Boil all the ingredients together for about 20 minutes, stirring to make sure it doesn't stick and to encourage it to reduce. After your arm starts to ache beyond belief, take it off the heat and let it stand for five minutes.
Place the pan into a larger pan of chilled water, and stir with a wooden spoon until the mixture begins to feel like a heavy paste.
Place into a flat dish lined with greaseproof paper. It should set within half an hour. Cut into squares and share about.
The original recipe used Vanilla Essence but you could use Vanilla seeds from a pod. One bean is equal to one teaspoon of Essence. But it's ridiculously expensive and only for the posh.
