Nanna's Swede & Carrot Mash
This recipe has been passed down from the women in the family for generations.
It's a winner with a roast lunch or a lamb chop & any leftovers & wouldn't be out of place in a soup.
Swede & Carrot Mash.
Not the easiest of veg to peel & chop, the earthy swede. Part of the cabbage family apparently which I didn't know. It brings a lot to this party. Your carrot is the dependable & sweet staple. A good marriage.
Chop both vegetables into chunks
Boil
Boil some more as it needs to be soft enough to mash
Off the heat
Drain
Butter & lots of it
Salt & pepper & lots of both
Smile as you mash
Taste & smile some more
Adjust as you wish - more seasoning, more butter
This is one of those dishes that whenever I make & eat, I can hear Nanna's tuneless humming in the kitchen.
