After a few weeks without eating red meat, I was hankering for a favourite comfort food of mine.
Beef Chilli with Rice.
When the only piece of cutlery required to eat is a spoon, you know it's going to be a winning event.
To get everything started, some oil in a frying pan then ..
Shallots
Garlic
Chillies (however hot you like it)
Baby Peppers (sweeter than the large ones)
Cherry Toms (or tinned, whatever's to hand)
Kidney Beans
400g Beef Mince
Water to keep everything bubbling away for forty/forty-five minutes
Rice, it's not complicated.
For just me, this amount works
In a saucepan ..
One mug of cold water
Bring it to a simmer
Half a mug of rice goes in
Stir & cover
Ten minutes
Test a few grains
Off the heat with the lid on for two minutes
Dish up.
Go for seconds
