In Praise Of The Tomato III

Decisions have been made.
Lots of tomatoes. Lots of choices.
Number 1) For supper tonight Tomato, Sausage & Lentils.

Number 2) The afternoon began with the making of Tomato Chutney.
For two jam jars
900g Small Mixed Tomatoes
350g Onions - peeled & roughly chopped
90g Dried Cranberries
250g Muscovado Sugar
2 Red Chillies
3 Garlic Cloves - sliced
1tsp Salt
2tsp Yellow Mustard Seeds
300ml Apple Cider Vinegar
Into a large pan put the chopped onions, garlic, cranberries, sugar, chillies, salt, mustard seeds and vinegar
Bring to the boil, turn down the heat & leave to simmer for an hour, stirring now & again
After 25 minutes, add the tomatoes and continue to simmer & stir
Have your sterilised jars & lids to hand before filling them with the luscious sweet & sour tomato abundance.
Leave for at least 3 weeks to let all of those flavours mingle. Keep the jars in a cool, dry, dark place for up to a year. Once opened, keep in the fridge & use within 3 to 4 months.
I'm excited about my new found affection for the Solanum Lycopersicum.
