Easter Day

It's a late Easter this Springtime. 

I'm bookending the weekend workwise & so it's good to have some time to myself. 

Here's what's on the menu for Easter Sunday.

A Lamb Chump Steak from the local butcher which has been marinated in mint, oil & rosemary.

That will need to be at room temperature before going into a roasting pan & a hot oven (220C/200C/Gas 7) for pink lamb, or for up to 30 minutes if you prefer your lamb medium to well done. A few cloves of unpeeled garlic are nice in there as well.

To the vegetables then ..

Some British New Potatoes, parboiled & then into a hot dish of oil with salt in the oven for 45 minutes.

I'd thought about just having boiled spuds with some mint but I was in the mood for some roasties.

Plus, Courgettes, Flowering Cauliflowers & Asparagus.

There was a jar of Mint Sauce picked up yesterday & it will be added liberally to the final plate.

There’s some unopened chocolate in the cupboard for later as well.
