Christmas Crumble


I'm in the mood to bake today.

There's leftover mincemeat to be used.


We're in the season for Cranberries & Blackberries.

Crumble. Hello ..

CRUMBLE

300g Plain flour
Salt a pinch
175g Soft Brown Sugar
200g Butter, cubed, & a little for greasing the baking tray

FILLING

200g Blackberries
200g Cranberries
100g Mincemeat
1 Lemon, zested
50g Brown Sugar
1 tbsp Plain Flour
1/2 tsp Sweet Ground Cinnamon
1/2 tsp Ground Ginger

Preheat the oven to 180C/160C Fan/Gas 4

Mix the flour, salt & sugar in a large bowl before rubbing in the butter

You're aiming for a breadcrumb mixture 


Place the fruit & the mincemeat in a large bowl & sprinkle over the sugar, flour, ginger & cinnamon & stir well

Butter a 24cm ovenproof dish before spooning the fruit mixture into the bottom, then sprinkle the crumble mixture on top 

Bake for 40–45 minutes until the crumble is browned & the fruit mixture is making an appearance, slightly bubbling

Add the lemon zest 10 minutes before taking the crumble out of the oven


There was no custard or cream for me this evening.


That's not to say you can't.
