Cucumber & Chilli Relish

There's something about this time of year which makes me want to fill jars with ..
Vegetables, fruits, vinegar, sugar, spices .. & the most important ingredient ..
Love ..
Anyway, I'm looking to do something new today.
Cucumber & Chilli Relish
For 3 jars ..
1 kg Cucumbers
1 Onion peeled & chopped
2 tbsp Salt
300ml Cider Vinegar
200g Granulated Sugar
1 tsp Turmeric
1 tsp Pickling Spice
1 tsp Fennel Seeds
1 tbsp Yellow Mustard Seeds
1 Red Chilli deseeded & thinly sliced
Peel the cucumbers, halve & then remove the seeds with a teaspoon
Slice them into 3-4cm pieces & place into a colander together with the chopped onion & place over a bowl
Add the salt making sure everything gets covered by turning it over
Pop a clean teatowel over the top of the colander & leave for 2 hours
Rinse the salt off in very cold water before wrapping the mixture in another clean kitchen towel and squeezing out any excess water
Into a pan add the vinegar, sugar, turmeric, pickling spice, fennel & mustard seeds plus the sliced chilli
Heat & stir to dissolve the sugar before bringing to a gentle boil
Next add the cucumber & onion & heat through till everything comes to the boil for 3 to 4 minutes then simmer for around 5 minutes
Spoon into your sterilised jars
I'm hoping that this might be quite tasty on top of a burger or on some cheese on toast, maybe a roast beef sandwich ..
Always excited to try new things & in this autumnal season looking towards preserving tasty treats for the colder months ahead.
