Post-Jab Carrot & Ginger Soup
In other words this is Comfort Soup.
This is my Oxford-AstraZeneca Soup for friends & family. (Other vaccines are available.) .. I felt elated after my first jab & the same after the second dose. I had made soup pre-both visits just in case I didn't feel too bright afterwards. As it turned out, I was absolutely tickety-boo.
A few people I know had some cold & flu-like symptoms though & we all know the best cure for the aches & shivers.
S O U P
For Two
Oil
Knob of Butter
1 Large Onion chopped
Knob of Ginger peeled & grated
1 Garlic Clove sliced
Nutmeg a healthy grating (or half a tsp of ground)
500ml Chicken Stock
250g Carrots cut to your liking
200g Cannellini Beans (don't drain, use the liquid in the soup)
2/3 Bay Leaves
Almonds & Fresh Mint to garnish
To a good-sized frying pan add & heat your oil & butter before introducing the onion, garlic & ginger for 10 minutes
Stir in the nutmeg
Pour in the chicken stock before adding the carrots & the beans plus some seasoning & the bay leaves
Cover the pan & simmer for 25 minutes
Ladle two-thirds of the soup into a blender or a food processor
Blitzing time & then return the smooth mix to the pan & reheat for just a few minutesInto bowls topped with the almonds, mint & another quick sprinkle of nutmeg
Crusty, buttered bread on the side.
Hot water bottle and take to your bed for a good sleep having been nourished & jabbed.
