To that end I have decided to treat myself this Easter weekend to ..
A hearty, hardy mountain cheese that takes no nonsense from anyone.

One of the reasons that I love this beast is that when it is maturing it does so in silence & darkness.
In a cave.
This is where it gets its personality for us to enjoy.
If there was a plug socket & Netflix, I would join the Comté in the cave.
