Apples & bananas.

CG: "Would you like a couple of bags of fruit? They won't be in good enough shape to sell on Monday."

Saturday morning & time to think about what to bake.

Not tried this before but let's combine the two.

Oven at 180C/160F/Gas 4

150g Light Brown Sugar

85g Butter softened

2 Eggs beaten

4 Bananas ripe enough to be mashed

2 Apples grated

40g Sultanas

250g Self-Raising Flour

1/2tsp Mixed Spice

1/2tsp Ground Ginger

1/2tsp Nutmeg

Butter & line a 2lb loaf tin & then you're ready for the off

The sugar & the butter need to be creamed together

Gradually add the beaten eggs

Stir in the mashed bananas, grated apples & sultanas

Flour & the spices are next

Mix together & pour into the loaf tin

Bake for 60 minutes but keep an eye & if it starts to darken too early, cover with some foil

Your kitchen will smell heavenly

Once out of the oven let the cake cool in the tin for 30 minutes

If you can wait that long, that is.
