Saturday Night Chicken
There are lovely things in the fridge for the weekend.
Plus a few equally good bits & pieces which need using up.
Chiefly, Pecorino & Pancetta.
There's a chicken breast & a newly delivered veg box.

The breast I’m using is a biggun. It cost just over £9 but I know even looking at it that this will provide me with 2 meals.
Here's a plan.
Oven at 180C/160F/Gas 4
1 Chicken Breast sliced lengthwise to create a pocket
50g Pancetta diced
50g Pecorino diced (or any cheese you have which is outstaying its welcome in the fridge)
1 Shallot chopped
1 Smoked Garlic Clove ditto
On the hob, heat a pan with a little bit of oil & add the pancetta
You want this crisp
Then add the shallot & the garlic
You don't want any of these two to burn
Tip all three into a bowl & season
The cheese is the next invitee to join the gathering
Mix
Here comes the chuck business
Get the filling into the chicken & secure with a couple of cocktail sticks
Oven for 30 minutes
