A Festive Spanish Supper

It's been a foggy day here in London Town.

And a cold one, too.

The Christmas clock is ticking & I have nice little jobs to do.

A festive clean of the home. Pickles to deliver to friends.


What for my supper though?

Rick Stein for some inspiration. Tweaked. Proper posh Spanish fayre. Properly delicious.

For two with plenty of leftovers

2tbsp Olive Oil

225g Puy Lentils (Already cooked)

10 (yes, 10,) Garlic Cloves peeled & sliced

1 Onion finely chopped

2 Carrots ditto

100g thinly sliced Iberico or Serrano Ham

1tbsp Pimentón Dulce Sweet Spanish Paprika

4/5/ Small Tomatoes chopped

125ml Dry Cider

Handful Fresh Parsley chopped 

Warm the oil in a decent sized pan & add the onion, carrots & garlic to soften for around 15 minutes

Add the ham and cook for another 5 to 6 minutes

In goes the pimentón, tomatoes & cider to simmer for 5 minutes

The lentils are next plus seasoning & some water if the mixture needs loosening a wee bit

Simmer for another 5 minutes

Get a spoon.

No other cutlery required.
