Finding My Mojo
My year is somewhat topsy turvy.
For me the year starts in Autumn. That is when things always seemed to start for me. Growing up, obviously it was when the new term started at school, and then later college. But then I have had a number of jobs that started in the Autumn. It always seems to be the time to get your ducks in line for the rest of the year. Plus, I was always more excited by the TV programmes that started in the Autumn too. They were always more exciting, perhaps because they would culminate at Christmas.
And whereas most people Spring Clean … I Autumn Clean.
The spice shelf was my target on this occasion.
Prompted by a nagging recollection that I had once upon a time brought back some Mojo Picon spices from the Canary Islands. No doubt an impulse buy in the local supermarket. To provoke memories of balmy evenings in seaside tapas bars. And indeed, there it was.
Potatoes with Mojo Sauce is one of my favourites.
By a happy coincidence I had some forlorn left-over new potatoes in need of a new life in the sun. So.. into the oven, doused with some olive oil and sprinkled with crunchy sea salt they want.
I cheated with the Mojo Picon saunce because I had some already made up spice mix, but it’s not difficult to make.
Chop up a red pepper, an onion and a chile pepper. Four cloves of garlic, likewise chopped. Pinch each of Paprika, Cayenne Pepper, and Cumin.
Add to a pan with a cup of olive oil, 3 Tablespoons of Red Wine Vinegar, and some chopped coriander.
Toast a slice of bread.
Let the mixture cook a bit.
Liquidise it all together (toast included).
Serve with potatoes, a little grated cheese and some crusty bread spread with butter.
A glass of Cordon Negro to wash it down.
