In my experience….

Pears hang around looking llike they belong in a still life like Gauguin or Cézanne, resolutely hard until suddenly going brown and becoming inedible without warning.

I do like pears. I would like to eat more of them. I wish there was an app which told you the perfect moment to eat them.

Anyhow … I failed again. I had four pears … this was from the phenomenal veg box for £1.50 I got the other day. I knew they were about to cross that line.

So, I felt a Pear and Apple Tart was calling.

Pears - peeled and cut thinly to make ‘question mark’ shapes.

Blind baked some puff pastry in a tin dish (after having greased it first.)

Made up some apple sauce (apples boiled, with a little sugar and a big dollop of maple syrup, pinch of cinnamon.)

Spread the appple puree as a base in the tart… a bit like you’d spread the passata on a pizza.

Then arrange the pear slices on top on two circles. Anything left over, pile up in the middle.

Then brush some maple syrup over the top. Brush some egg yolk along the circumference. Pop in the oven till the pear is soft and cooked.

Serve with ice cream or cream.
