Chicken & Noodle Soup

Soup on a January evening after work equals happiness in my book.

There's some chicken left from the Sunday roast & a homemade stock.

A quick glance to see what veg is about at home plus a look in a cupboard for a carb accompaniment .

N O O D L E S

Everything is quick to cook.

1 pint Chicken Stock in a saucepan

Add your juicy chuck pieces

2 Carrots washed & quartered

Handful of mushrooms if you fancy (I did)

Simmer for 15/20 minutes

Seasoning

In a separate pan start cooking some Broccoli/Cabbage/Cauliflower (whatever you have around)

I like to steam the greens and then in the pan underneath go your Noodles

Everything into a generous & welcoming bowl

Some parsley & a dollop of yoghurt to finish

Warming. Tasty. I'll sleep well tonight.
