It's Sunday morning.

I'm defrosting bananas kindly donated by the gent at the work café on Friday.

CG: "They're on the turn & will be binned, want them?"

Me: "Yes please."

I don't want to bake a cake today.

What to cook.

CHUTNEY

With bananas? W H A T ?

Yes.

Let's give it a go. If it doesn't work, it won't matter.

Ingredients assembled. There's a few but don't let that put you off.

This should fill 2/3 small/medium jars.

Onion, thinly chopped (very thinly)

Chilli, red or green, (as above)

Garlic (3/4 cloves as above)

Mash 4 bananas (defrosted)

Ginger (a piece the size of half a lime, grated)

Raisins (handful & optional)

Turmeric (tsp)

Cider vinegar (130ml)

Brandy (couple of glugs)

Tomato puree (tbsp)

Soy sauce (tbsp)

Honey (2 tbsps, I have some beautiful Welsh Trefriw (Misti Blu Hive) courtesy of Robert)

Seasoning

Heat some oil in a pan. Slowly fry the onion (10-15 minutes) before adding the chilli, garlic, ginger & turmeric

In go the bananas, raisins, honey, brandy, cider vinegar, soy sauce, tomato purée & s&p

Let it simmer & bubble like a witch's cauldron & stir frequently

20 minutes should see it done

Cool & jar it
