The pile of bananas is dwindling. I think I’ll need another recipe though. In the meantime, here is a rather nice Banana and Peanut Butter Flapjack recipe which worked rather well, even though I slightly undercooked them. Impatience has always been my downfall.

Ingredients:

50g Butter
2 Tablespoons Smooth Peanut Butter
3 Tablespoons Maple Syrup
2 Bananas
1 Apple
250g Oats
85g Chopped Dried Apricots
85g Mixed seeds and berries
100g Raisins

Method:

Heat the oven to 160C
Grease a shallow baking tin with a little butter.
Heat up the peanut butter, maple syrup and butter in a pan so it goes gloopy.
Microwave the bananas to soften them, then mash them. Peel and grate an apple.
Add these together with a 100ml of water.
Add the oats, apricots, seeds and raisins and stir thoroughly so everything is covered by the mixture and there are no clumpy bits.
Pour into the baking tin.

Cook for an hour, until golden brown on top. Like I say, I think I undfercooked mine, but a slightly moister underneath was actually quite nice.

Off in search of another banana recipe. Slightly nervous I have a lot of carrots that need using up. They may take priority.
