The Courgette Challenge

Robert has asked me to cook something tasty with courgettes. 

I'm not a fan to be honest. Of courgettes that is, not Robert. I'd organise a parade for him.

They seem to be a needy vegetable. Not much to them flavourwise so assistance is needed. Tomatoes, garlic .. but that route seems to be a bit too obvious. 

Let's get the frying pan out. It’s fritter time. (*Sings*) 'Hammer Time, You Can't Touch This' ..

Into a bowl goes some grated courgette. Grate a wee slab of Parmesan. Chopped walnuts. Tbsp of self raising flour. Seasoning (I love a bit of garlic pepper). Mix together.

Roll into the size of snooker balls. Chill in the fridge on a plate to firm for twenty minutes or so.

Heat some oil in a non stick pan. Press your courgette gems into flat patties. Gently fry 

DON'T TURN OVER TOO EARLY

I turned over too early.

For the Salad

Little Gem lettuce, Cucumber, Cherry toms, Spring onions, Avocado, Bit of lemon, Feta.

Lessons learned:

Next time, the water from the veg will need to be squeezed out much more once grated. Visually, it was not my finest achievement. Everything pleased on the palate though & I have four little fritters in the fridge ready to fry for tomorrow.
