The choice of the first drink before a special repast carries the same weight as that of what you’ll be eating.
Sometimes the occasion can dictate your selection. Fizz for a birthday or anniversary.
Other days it might be a cocktail for a: “I haven’t seen you in an age ..”
Today, with AG, we’re in Borough, London, & there’s time for a glass or two before heading for lunch:

It has the most wonderful wall of wine.
Wouldn’t you love to use that as a description on your CV?
For us, it’s something light with bubbles before what we know is going to be a Roast Beef lunch with a heady red as a mate.
We went for this from the menu, a Sparkling Rosé:
