Piquant New Year Noodles
Well, almost New Year Noodles ..
It's the last weekend of December & there's some leftover turkey to be used.
I have really enjoyed my Christmas lunches (X2 by the way) but, now, I need a little spice on my plate.
It's time for perky turkey.
For One ..
Cooked Turkey sliced into strips
2/3 Garlic Cloves sliced thinly
Thumbnail piece of fresh Ginger peeled & sliced
2 Chillies sliced thinly (seeds within or otherwise, your choice)
3 Spring Onions sliced
1 Red Pepper sliced into strips
1 tbsp Soy Sauce
1 Lemon zested & juiced (save a wedge)
100g Noodles (I used pre-cooked Singapore Noodles)
Heat some oil in a large frying pan & add the garlic, ginger, chillies & the red pepper
Let everything cook over a moderate heat for around 10 minutes stirring frequently
Next in the pan go the spring onions & the turkey
Add the lemon juice, the zest & soy sauce making sure everything is well mixed
Finally, the noodles join the rest of the ingredients for 3 to 4 minutes before you plate up
A squeeze of the lemon wedge plus a final few drops of soy sauce & you're good to go
There's one more round of roast turkey for me today with the remaining meat sliced & in the ice box.
I love Christmas, as you may know from the blog & the pod, & the food is an enormous part of my festivities.
Next to tackle - the remainders of the veg box - thankfully it is aubergine-free. A fruit I hold in disfavour.
Kale is a close second & there's a bag of it I need to face & deal with before 2025.
AMM
