Sausage, Haricot Bean & Tomato Stew
Hello November.
It’s still not quite chilly enough for autumn to my mind right now.
Having said that, now, heading home as dusk falls has been a bit of a surprise after the clocks changed.
I love this time of year. I like getting in from work & putting the lamps on. Lighting candles at the weekend for an extra glow, too. Then there’s the time in the kitchen, cooking warming dishes.
One of the most recent has been bringing together sausages, haricot beans and tomatoes.
I can’t tell you how satisfying this is particularly with some really decent mashed potatoes & sprouts as plate mates.
For two
Olive Oil
6 Sausages
6 Shallots chopped
3/4 Garlic Cloves sliced thinly
2 Red Chillies ditto
400g Tin of Cherry Tomatoes
400g Tin of Haricot Beans drained & rinsed
250ml Chicken Stock
1tsp Dried Oregano
Heat the oil in a frying pan & get the bangers on to brown all over before moving them onto a warm plate
If you need to, pop some more oil into the pan before adding the shallots, garlic & chillies & cook on a low heat for 10 minutes
The tomatoes & haricot beans go in next
Time for the stock to go in plus the oregano
Bring to a simmer and reintroduce the sausages to the pan
I like to give this 35 to 40 minutes to gently bubble away but checking that there is enough liquid
