Cod with White Beans & Chorizo

A really good location with great service by friendly folk who delivered some tasty food.
My choice struck such a chord that I decided to try to recreate the dish at home.
Chunky cod, sweet & smoky chorizo plus soft, unctuous white beans. Some parsley for added colour.
For two
Olive Oil
2 Cod Loin Steaks skinned
100g Cooking Chorizo sliced or chopped for preference
1 Red Onion finely sliced
1/2 Red Pepper sliced
2 Garlic Cloves finely sliced
250ml Red Wine
2 tbsp Tomato Purée
400g Butter Beans or Cannellini Beans drained & rinsed
Handful Fresh Parsley chopped & some Lemon to garnish
Heat some oil in a pan before adding the onion & red pepper. Soften both over a medium heat for around 7-9 minutes.
The garlic goes in next for 2 minutes before you pop in the chorizo & let it cook so that the oil is released & coating everything
Turn up the heat & then pour in the wine leaving it to bubble & reduce
Next in is the tomato purée & your choice of white beans & stir
Cover with a lid or some foil & bring to the boil
Season the cod & nestle into the pan. Reduce the heat and gently simmer for about 12-15 minutes.
Gently mix in the beans & cook for a few minutes
Ready to serve now just scatter with the parsley & lemon
You won't need anything else with this dish apart from an appetite & a spoon.
A smile will follow. That's a given.
