A Taste of Summer

Despite being a June baby, I'm not the best in the summer sun.

I think I have a Scandi DNA.

The best things about these warm months are, in order, as follows ..

1) Cricket

2) Tomatoes

3) Strawberries

The worst things are, in order, as follows ..

1) Heat

2) Humidity

3) Mosquitoes

On a sticky, muggy evening I am in need of a light supper which is quick to cook & doesn't require the oven.

It was a birthday gift from a cousin & it's a joy to read.

Here's one of my favourites from the pages.

Linguine with Lemon, Pecorino & Basil.

Or as they would say in Sardinia .. Linguine con Limone, Pecorino e Basilico

Here's what you will need for two of you ..

250g Linguine

2 Egg Yolks

100ml Double Cream (I swapped this for Crème Fraîche)

2 tbsp Mascarpone

2 tbsp Pecorino grated

1 Lemon zested & juice of 1/2 of it 

40g Butter cubed

Basil Leaves

A pan of water for your pasta goes on to boil with a touch of salt 

Into a mixing bowl go the egg yolks, cream, mascarpone, pecorino & lemon

Whisk & then add the cubed butter before placing the bowl over your pan of bubbling linguine so that the sauce warms through

Drain the pasta, add the sauce to it & stir making sure the linguine is coated thoroughly (just like I am in Winter)

Your torn basil leaves complete the dish with some pepper

Quick. Easy. Light.

Lemony.

Summery.
