Spring (Roll) Time

According to tradition … May Day was a day for welcoming in the Spring.

Strikes me as being a little bit late in these latitudes. Spring is springing and has been for some time, but it always puts a .. spring .. in my step.

In keeping with the wisdom of the ancients, I bathed my face in morning dew, to purify my skin.

Let’s see if it works.

Perhaps it was the significance of the day that put me in mind of Spring Rolls? Staring into the deepest recesses of the fridge, I spotted some stir-fry crying out for attention. But I didn’t fancy stir-fry. I always find stir-fry just a little bit disappointing, even when it’s done properly in a hot wok.

So, what to do?

How about making some Spring Rolls, I thought.

Separately cooked up some noodles, tossed in a little chilli oil. then set aside.

Cooked the stir-fry veg (bean sprouts, carrot, cabbage and peppers), adding a dollop of peanut butter to make a claggy mass. Set aside.

In yet another pan… sautéed some finely chopped almonds, garlic, celery, ginger, and onion.

I nipped out to buy some of those pancake wraps you are given with a crispy duck in Chinese restaurants, though I was going to try making my own. I sensed I would make a hash of it. Best not tempt fate.

Assembly - strip of noodles, then claggy mass, and then the tasty tidbits. Egg around the edge of the pancake, roll up and fold under the ends. Dab of egg on top, and sprinkle with sesame seeds.

Into the air fryer … occasionally spritzing them up with some spray oil … and turning half way.

Tasted amazing.
