Sausage, Chorizo & Butter Beans
The seasons seem to be changing but also merging, don't you think.
Here we are in October, autumn is officially here, yet it's 22 degrees in my part of the world today.
No matter, I'm in the mood for some comforting food for the time of year.
Good sausages, spicy chorizo & hearty butter beans all in one pot.
For two (or one with plenty of leftovers)
4 x Sausages - I went for a Venison & Red Wine variety from my local gent
25g Chorizo
1 Onion roughly chopped
4 Garlic Cloves thinly sliced
200ml Passata
Red Wine a glass
Butter Beans 400g can drained & rinsed
Panko Breadcrumbs 25g
Oven on 200C/180Fan/Gas 6
First off, get the bangers & chorizo cooking in some oil in a frying pan. Brown the sausages on all sides before removing to a warm plate
Next into that pan with all its delicious residue will be the onion & the garlic to cook for about 6-7 minutes
The passata follows & stir everything together for a minute or so before adding the red wine & simmering briefly
Return the sausages & chorizo to the pan & bring everything to the boil before adding the butter beans & seasoning
Cook for 15 minutes
Take your pan away from the heat and get everything into an oven dish
The final touch - the breadcrumbs - scatter over the top of the sausages, tomatoes & beans
Bake for 25 minutes
You could have this with mash or just veg or, as I chose to do, with some big pasta shells to capture all of that sauce, conchiglie.
Time to embrace autumn with all of the joys it brings.
Even if I'm still not wearing a coat.
