Summer Prawn Noodles

I was meant to be at a family barbecue this weekend.

The ongoing rail strikes put paid to me getting to Kent to attend.

There was an alternative journeying option but it would have resulted in a seven hour round trip. No thank you.

It seems to me that it's always the passenger paying the price here in the various ongoing travel disputes. In so many ways.

So, seeing that I can't be with kith & kin, this means it will be good to have a really nice treat for my Saturday supper.

King Prawns & Noodles

For one

A marinade for your crustaceans to begin

1 tbsp Fish Sauce 

3 tbsp Sherry Vinegar 

1 Lemon zested & juiced

1 Red Chilli finely chopped

8 Raw Prawns

For your noodles

50g Cucumber peeled, halved & deseeded

Handful Mint Leaves

Ditto Coriander

70g Noodles 

Into a mixing bowl bring together the fish sauce, sherry vinegar plus the lemon zest & juice. Add the chilli & the prawns, cover, pop in the fridge & leave to marinate for about an hour

Cut your cucumber into short lengths & put them into a bowl together with the mint and coriander leaves

Noodle time. Follow the cooking instructions on the ones you have. This shouldn't be too long at all. Once done, set aside

Heat some oil in a frying pan before adding the prawns, let them cook for a couple of minutes, turning once & then remove them

Next the marinade goes into the same pan to bubble & to reduce by about half

Drain the noodles & let them join the cucumber & herbs

In go the prawns & the marinade before tossing everything together

A light, summery & very satisfying Saturday supper.

Not a Minhall family BBQ but, hopefully, there'll be another time for that.
