A Simple Steak Supper
There's a very busy two weeks at work ahead. Including weekends.
I'm trying to plan ahead for meals. For this Friday night though, I'm in the mood for a fillet steak.
Granted it's not a cheap cut & so it's a treat.
Mates on the plate?
For one.
Fillet Steak (at room temperature)
1 Sweet Potato peeled & cut into wedges
1 Red Onion ditto
Oven on at 200C/180C/Gas Mark 6
Season the sweet potato wedges and place in a baking dish
Drizzle some oil over the top of them before popping them into the oven for 35 minutes turning occasionally
Add the onions to the potatoes & toss so they get coated with some oil
Back in the oven for 10 minutes
Heat a frying pan on the hob
Rub some oil onto both sides of your steak & then season before laying it down in the pan
For me it's 3 minutes each side for medium rare before taking the fillet out & letting the beauty rest for at least 10 minutes
Juices from the rested meat can be poured over your finished plate of crispy, sweet spuds & onions
