North Wales has its Lob Scouse … but, as a South Walian, I grew up with Cawl - Lamb Stew.

We’re between storms here in Bangor. From my window I can see a vast patch of sky, and watched the first storm (Dudley) sweep in, do its worst, and then move away to leave a surprisingly fine and sunny afternoon. But not for long. Storm Eunice is on the way.

Time to batten down the hatches.

Welsh Cawl

Cube some Welsh lamb (Preferably not Barry or Brenda, the lambs who came to stay last year.)

Brown the lamb in a little oil and some chopped garlic.

Add to a slow cooker, along with roughly sliced Swede, Carrots, Parsnips and New Potatoes.

Slice in two leeks and a couple of shallots.

Cover with Lamb stock.

Stir in a handful of Parsley.

S L O W L Y C O O K

Serve with crusty buttered bread.
