Spiced Winter Red Cabbage

Nice for a chilly January evening

The red cabbage is a thing of beauty I think.

Hidden delight until you cut it open.


There was one which had arrived in a veg box & I decided to give it some warmth on a bitter January evening.

For two (generous)

1/2 Red Cabbage cored and sliced

50g Butter

1 Red Onion chopped

100ml Red Wine Vinegar

25ml Honey

50g Brown Sugar

1 Bay Leaf

1 Star Anise

1 Cinnamon Stick


Into a heated frying pan add the butter & once melted in goes the onion for 4-5 minutesThe cabbage is next & should cook for 2-3 minutes

Stir in the vinegar, honey, sugar, spices & a hearty pinch of salt

The heat is turned down & then simmer for around 40 minutes, stirring now & then, until the cabbage is tender

Remove the spices & serve


Savoury, spicy, colourful & with some sweetness too. We had ours with some breaded haddock & cauliflower cheese.
