Smoked Garlic & Parmesan Baked Leeks
There was a message from Robert to tell me that he was off to Cardiff to watch the rugby.
Wales v Canada.
I was just back from a shop & in the bag were some Welsh leeks for a weekend dish.
For two:
2 Leeks topped & tailed, cut in half & then split lengthwise before washing
Butter 60g melted
Parmesan 50g grated
3 Smoked Garlic Cloves sliced thinly
Dried Thyme
Oven at 200C/400F/Gas 6
Place the leeks cut side down into a baking tray together with 120ml of water
Cover and put into the oven for 5-7 minutes until the leeks are slightly tender
Remove & drain the water
Turn the leeks over & add the melted butter, Parmesan, smoked garlic, thyme & season
Bake for 25-30 minutes until the leeks are golden
I added them onto a plate to join a roasted Sutton Hoo chicken breast together with some buttered red potatoes & mint.
Wales beat Canada 68-12. No real contest one suspects. I think that if Robert had taken his boots he would have got a game.
