Advent Calendar - Day 8 - Mincemeat Christmas Crackers
I'm looking to take some seasonal treats into the workplace.
I road tested my first batch on a friend.
Chums are the best to trial recipes.
Easy to do & not time-consuming.
No hats, no mottos.
For 6 to 7 rolls.
Oven 200C/190C/Gas 6
150g Mincemeat (a top notch one)
220g Filo Pastry Sheets (from the chiller cabinet in the supermarket)
Water
Icing Sugar to dust
Lightly flour a board & place sheet number one of the filo sheets onto it
Here comes the mincemeat
A cigar-shaped roll of it but leave a couple of centimetres from all of the edges of the pastry
Brush the sides with water & then roll away from you
Keep brushing the water on so to avoid the tissue thin filo from drying too quickly
More dabs of water & press to seal your fruity cracker, middle & both ends
Place the parcels onto a greaseproof paper-lined baking sheet
Repeat the process until all your pastry & mincemeat has been used up
Into the oven for 15 minutes
A little dusting of icing sugar once the crispy beauties are out
Eat warm
Robert **loves** my jokes so here's one of my favourite cracker puns.
Q: What do you call a boomerang that doesn't come back?
A: A stick.
