Beef & Porter
I've been for a lovely long walk today.
A nearby park was full of excited hounds, children in wellies & grown-up folk with trendy coffees.
My Sunday evening meal had been planned since Friday.
A beef, ale & carrot stew.
Plenty for two or one with leftovers aplenty.
500g Stewing Beef cubed
1 Onion chopped into chunks
4/5 Carrots as above
1/2 Garlic Cloves peeled & left whole
1tbsp Plain Flour
500ml Greenwich Winter Spiced Porter (or any decent & rich stout)
100ml Beef Stock
2/3 Bay Leaves
Oven 160C/140C/Gas 3
Heat some oil in a large frying pan or casserole dish
Brown the beef on all sides
Add the onion, carrots & garlic cloves
Scatter the flour & stir really well
Beer - in
Stock - in
Seasoning
Simmer
Cover with the casserole dish lid or the pan with foil
Into the oven for 2 to 2 & a half hours
Winter veg & soft yielding mash to serve I reckon.
A glass of Malbec wouldn't go amiss either.
