Orange & Apricot Cake

There's something very lovely about having the aroma of a baking cake on a Sunday morning.

After another Covid Lockdown announced I just want to have a bit of normality & comfort.

It's time to get a cake made.

I'm a girl of simple needs.

Orange & Apricot.

Oven 160/140/Gas 3

175g Dried Apricots chopped

2 Oranges zested and juiced

175g Butter softened

175g Caster Sugar

3 Eggs beaten

280g Self-Raising Flour

Butter & line a loaf tin with greaseproof paper

Get the fruity part of the cake started first. Into a pan go the apricots, orange zest & juice

Heat gently, stirring frequently. The apricots will absorb everything (including your gas bill if you're so inclined)

Let the mix cool

The butter & the sugar need beating until a lovely light colour

Slowly add the eggs

Flour next & needs to be folded in

Pimped up apricots are added

The gorgeous concoction goes into the loaf tin

Wait for it

"B A K E"

Wait (patiently) for 50 minutes to an hour then cool for 10 minutes before taking it out of the tin

Sing a song, make a pot of tea and get yourself a slice.
